This is the data that will be needed to populate the FE mentor request form’s drop down inputs.
We were using two different gems to interact with Airtable. This is unneeded complexity. This implementation goes directly to the source, removes any confusion, and any babysitting of dependencies.

Description of changes
Why is this feature being added?
The FE has the beginnings of a "Mentor Request Form" in mentorRequest.js. This form will only be accessible to ID.me verified users. This data needs to ultimately be populated in Airtable's in our mentorship airtable.
